I have several sound effects stored on digital MiniDisk from around 2001. I have transcribed them by re-recording the analog playback signal since I have no way to read the digital files from the disk directly. Can anyone suggest a way that I can obtain the original digital file from the disk? Are they in a common format that I can use?

If you by digital minidisc mean a hi-md, you can use the sonicstage software from sony, or this: https://wiki.physik.fu-berlin.de/linux-minidisc/doku.php?id=qhimdtransfer

Can anyone recommend an adapter to go from the Sony Digital Optical output of my MiniDisk player to a USB connection? I need to get the digital signal into my computer in some way.

some computers also have a optical in, so connect them 1 : 1.
Since the optical out is a simple spdif digital stereo out.
There are optical to coax converters, but than you still need a spdif coax input.
If there are interfaces that convert optical stereo in to USB directly, I don't know.
But the hassle to convert that all, is too much of a hassle compared to the loss of quality.
The easiest is: playback on MD player with SPDIF out to a standard sound interface with SPDIF in.

But simply compare the quality to the analogue out recording: if hardly to hear, why make it more complicated?
