I see the follow button on a user profile and have followed a few (and have a couple of followers myself), but I am confused. What is the benefit of following someone? There doesn't seem to be anywhere I can see on-site where we can filter by those we are following?

When you follow a user you can see her new sounds in your activity stream: https://freesound.org/home/stream/
You can also get weekly email notifications about new sounds from users you follow. Enable them in the email setting page: https://freesound.org/home/email-settings/

You can also "follow" tags and groups of tags and get notifications about new sounds that have these tags. Start by browsing some tags here https://freesound.org/browse/tags/ and clicking on "follow".
