I am making an animation I want to put on Youtube, and use songs and sound effects in it from Freesound that are under the Attribution License.
1st Question: As long as I copy this text it gives me on my profile, into the description of the video for each sound, is it all right to use? Would I also have to include credits into the end credits roll? And could I also share the Youtube link other places without including credits there?

You don't have to include attribution in your rolling credits. You can put it in the description on Youtube, which is fine.
For Attribution 3.0 credits, as the bare minimum you should include the following:
• Author / Creator
• Original title
• License type and hyperlink [CCBY 3.0]
• URL
If you check that license URL, you can see that they have a couple of extra requirements, but don't worry about it. I've stated the bare minimum, because that is arguably the least you can "get away with", since on their website guidance for Attribution 2.0 that is what's included...

2nd Question: If I edit one of the sounds, where and how should I mention that in the description?
Technically, you do have to mention this for the attribution 3.0 license.
You could just put "[modified]" after the title of the sound to indicate this.

Is this all right? I think it gives everything you listed...
I am also a little confused on the "extra" things that 3.0 requires. How can I not list the extra requirements and still be ok? I was wondering what I would need to list? Does it mean saying something like, "These sounds were found on Freesound, all belong to their respective owners listed here. I do not claim credit for any of them." Etc ?

The only extra requirement that you haven't included is the disclaimer notice. It's not absolutely essential hence why it's not stated on the official attribution guide from Creative Commons, but good practise to include it I guess. What you wrote is fine in my opinion.
