I personally use Audacity Portable for it's user-friendly interface, and it's basically the same as Audacity with a couple less of the features that i dont use. but i prefer SoundForge.
I just found this SUPERB (nonfree, non-opensource) audioe diting program for mac called rather simply waveeditor:

For people on mac, this is really, really nice. It's about as good as good/quick as soundforge on PC.

I don't use Audacity but I use Steinberg's WaveLab 6.1, this is a great Editor and is coming soon for Mac Os !!

audacity, at least in my opinion is the single best sound editor, EVER, easy to use for newbies, and yet still an extremely convenient tool for professionals. hands-down, audacity is a MUST HAVE, theres no arguing it.

i would like to note that although intuition assumes i suggest those who dont use audacity are gay/penguins, another amazing feature of the human brain is common sense, which tells us that there are fewer penguins than there are compared to everything that isnt a penguin, common sense also tells us here that because of the absurdity of my statement it was likely to have been a simple joking comment meant to be mainly ignored, although i will say that the use of the g-word was a bit distasteful on my part.
I though it was fine. I got the joke.
I don't always use audacity, probably either Adobe Soundbooth CS3 or Audition 1.5
