I went to Egypt last year and recorded few tapes, I recorded many outdoor "call to pray" from early in the morning to late at night in urban and rural places. I have also recorded inside mosques during there celebration, ask me for precise stuff..., few chants... I am not completely of the content...

Try to improv some stuff on a major scale with a flatted second and sixth. Even a streight scale will have the step and a half that charcterist of middle eastern music.
