This is not mass, this is psalm chanting (My guess would be vespers). In addition to daily Mass, monks chant other "offices" of prayers and psalms throughout the day. There is Matins, Lauds, Prime, Terce, None, Vespers and Compline.
The solo voice we hear at the beginning is the precentor (or leader) and the other voices are singing in alternation with him.

I wonder if someone trained in Liturgy can tell us exactly what they are singing. form and function, text, responsorium, offizium, etc.
Ever since the first time I was in Firenze, San Miniato was my favourite church.
Ah Firenze....good memories...
